Berry Banana Bread
- Ingredients
- 3/4 cup butter, softened
- 1 (8 oz.) package cream cheese, softened
- 2 cups sugar
- 2 large eggs
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups mashed bananas (about 4 medium)
- 1/2 teaspoon vanilla extract
- 1 cup (or more) dried cherry berry blend
- Instructions
- BEAT butter & cream cheese until creamy. Gradually add the sugar until light & fluffy. Add eggs one at a time until incorporated
COMBINE flour & next 3 ingredients and slowly add the creamed mixture STIR in bananas, vanilla and berries
Bake for 1 hr. at 350 degrees (2 8x4 loaves)

Cherry Banana Smoothie
- Ingredients
- 1 oz tart cherry concentrate
- 1 banana
- 1/2 cup yogurt
- 1 tsp. honey
- 8 oz orange juice
- 1 cup ice
Chocolate Cherry Chocolate Chip Cookies
- Ingredients
- 1 cup sugar
- 1 cup light brown sugar
- 2/3 cup softened butter
- 2/3 cup shortening
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons vanilla
- 2 eggs
- 3 and 1/2 cups flour
- 2 cups of Chocolate Covered Cherries (You can always add more!)
- Instructions
- Cream the first six ingredients together. Stir in the eggs and vanilla until smooth. Mix in the flour. Finally, add the Chocolate Covered Cherries. Drop onto a cookie sheet by the teaspoonful. Bake in a 375 degree oven for 10 or 11 minutes or until they just start to brown. Yummy!
Cherry Walnut Scones
- Ingredients
- 2 cups flour
- 1/3 cup sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp nutmeg

- 8 Tbsp butter
- 1/2 to 3/4 cup dried cherries
- 1/4 cup chopped walnuts
- 1/2 cup sour cream
- 1 large egg
- Instructions
- Preheat oven to 400°.
- In a large bowl mix together flour, sugar, baking powder, baking soda and nutmeg. Slice butter and add to dry mixture and mix well with pastry blender or fork. Stir in cherries and walnuts.
- In a small bowl whisk together sour cream and egg until smooth.
- Use a fork to stir the sour cream mixture into the flour mixture until large dough clump forms. Use your hands to press the dough against the bowl into a ball. (The dough may be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
- Put the dough ball onto a lightly floured surface and pat into an 8 inch circle about ¾ inch thick. Sprinkle top lightly with sugar (a couple pinches should do it). Cut dough into 8 triangles and place on a parchment lined cookie sheet about an inch apart. Bake 15 – 17 minutes, until golden. Cool for 5 minutes. Great served warm.
Baked Oatmeal with Dried Cherries
- Ingredients
- 2 cups old fashioned oats
- 1/4 cup brown sugar
- 1/2 cup dried cherries (may sub with dried diced apple, dried cranberry, dried blueberry or dried mixed fruit)
- 1 tablespoon chopped nuts (walnuts or pecans)
- 1-1/2 cup milk
- 1/2 cup applesauce
- 2 tablespoons milted butter
- 1 egg
- Instructions
- Preheat oven to 375 degrees.
- Mix together and bake in a greased 8 X 8 pan for 20 minutes.
- This is a wonderful and satisfying breakfast for a cool morning. It re-heats very well too.
Cranberry Ham Wild Rice
- Ingredients
- 1 Tbsp olive oil
- 1/2 cup diced onion
- 2 cups cooked diced ham
- 3 cups prepared wild rice
- 1/2 cup toasted pine nuts
- 1 cup dried cranberries
- 1 Tbsp honey
- Pinch of dried tarragon
- 1/8 tsp cayenne pepper (optional)
- Salt & pepper to taste
- Instructions
- In a skillet, heat olive oil and sauté onions for about four minutes. Add diced ham to heat through. Mix in remaining ingredients and heat through; serve.
Chocolate Cherry Trail Mix
- Ingredients
- 1-1/2 cup dark chocolate covered dried balaton cherries
- 3/4 cup dried cherries
- 1/2 cup M & M’s
- 1/2 cup cheerios
- 10 oz can of mixed nuts
- Instructions
- Put all ingredients into a gallon zip lock bag, seal and mix by hand.
- Other fun add-ins kids like:
- 3/4 cup gold fish crackers
- 3/4 cup mini marshmallows
Cherry Chocolate Recovery Drink
- Ingredients
- 4 oz (120 mL) chocolate milk
- 2 tbsp (30 mL) tart cherry juice concentrate
- 2 tbsp (30 mL) plain yogurt
- ½ oz (14 g) dark chocolate, melted
- 1-2 tsp (5 – 10 mL) maple syrup (optional)
- Instructions
- Melt chocolate in saucepan over low heat or in the microwave for a few seconds. Add chocolate milk, tart cherry juice concentrate, yogurt, melted chocolate and maple syrup together and blend or mix well. Chill and serve.
Cherry Oatmeal Muffins
- Ingredients
- 1 cup flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup oatmeal
- 2/3 cup dried cherries
- 1/4 cup canola oil
- 1 egg
- 1 cup milk
- 1/2 teaspoon almond extract
- Ingredients - Topping
- 2 tablespoons sugar
- 2 teaspoons flour
- 2 teaspoons melted butter
- 1 teaspoon cinnamon
- 2 tablespoons finely chopped almonds
- Instructions
- Mix dry ingredients together. Stir in cherries. Mix oil, egg, almond extract and milk together and stir gently into flour mixture, blending only until moistened. Fill 12 paper lined muffin cups 2/3 full. For topping, combine all ingredients until crumbly. Sprinkle on muffins and bake at 400* for 15 to 18 minutes.
Cherry Granola
- Ingredients
- 2 cups oats
- 1/2 cup coconut
- 1/4 cup wheat germ
- 2 tablespoons ground flax seed (flax seed meal)
- 1 cup coarse chopped almonds
- 2 tablespoons canola oil
- 1/2 cup honey
- 1 teaspoon vanilla
- 1/4 teaspoon almond extract
- 1 cup dried cherries
- Instructions
- Mix oats, coconut, wheat germ, flax seed, and almonds together. In a separate bowl mix canola oil, honey, vanilla, and almond extract. Pour over dry mix and stir well.
- Spread evenly on a lightly greased baking sheet. Bake in 300° oven for 30 minutes, stirring twice.
- Take out of oven and stir in 1 cup dried cherries and let cool. Store in airtight container.
Cherry Concentrate Punch
- Ingredients
- Tart Cherry Concentrate
- 7UP or Sprite
- Instructions
- Mix 3/4 to 1 cup of cherry concentrate to a 2 liter of 7UP or Sprite. Chill and serve.
Red Rustic Tart
- Ingredients
- 3 large apples such as Jonathan or Macintosh, peeled, thinly sliced (4 cups)
- 5 tablespoons sugar, divided
- 1-1/4 teaspoons cinnamon, divided
- 1 cup dried tart cherries
- 1 refrigerated rolled pastry for a 9-inch pie (1/2 of a 15 ounce package)
- 1 tablespoon butter
- Instructions
- Heat oven to 375oF. Combine apples, 4 tablespoons of the sugar and 1 teaspoon of the cinnamon in a large bowl; toss well. Stir in cherries. Let stand 10 minutes; tossing once.
- Line a 15 x 10-inch jelly roll pan with foil; coat foil with cooking spray. Unroll pastry onto pan. Mound apple mixture over center of pastry leaving a 3-inch border around edges. Fold up edges of pastry over apple mixture leaving a 4-inch opening in center. Gently fold and press pastry onto apple mixture. Cut butter into small pieces and arrange over apple mixture.
- Combine remaining 1 tablespoon sugar and 1/4 teaspoon cinnamon; sprinkle over tart. Bake 30 to 35 minutes or until pastry is golden brown and apples are tender. Let stand 20 minutes. Serve warm or at room temperature. Makes 6 servings.
Chicken Cherry Wraps
- Ingredients
- 1/2 cup nonfat lemon yogurt
- 1 tablespoon honey Dijon-style mustard
- 1 teaspoon Worcestershire sauce
- 3/4 teaspoon curry powder
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- 1 1/2 cups finely chopped cooked chicken (8 ounces)
- 1 cup dried tart cherries
- 1/2 cup seeded and finely chopped cucumber
- 1/3 cup shredded carrot
- 1/4 cup sliced green onion
- 4 (8- to 10-inch) whole wheat flour tortillas, tomato-flavored flour tortillas
- Instructions
- Stir together yogurt, mustard, Worcestshire sauce, curry powder, salt and pepper in a medium mixing bowl. Gently stir in chicken, cherries, carrot, cucumber and green onion. Mound about 3/4 cup chicken mixture just below center of each tortilla. Fold in sides, just covering edges of chicken mixture. Roll up from one side, jelly roll fashion. Serve seam side down on a plate.
Cherry Salsa
- Ingredients
- 1-1/3 cups frozen unsweetened tart cherries
- 1/4 cup coarsely chopped dried tart cherries
- 1/4 cup of finely chopped red onion
- 1 tablespoon chopped fresh or canned jalapeno peppers,
or to taste 1 clove garlic, finely chopped - 1 tablespoon chopped fresh cilantro or 1/2 tablespoon dried cilantro
- 1 teaspoon cornstarch
- Instructions
- Coarsely chop frozen tart cherries. Let cherries thaw and drain, reserving 1 tablespoon cherry juice. Once cherries are thawed, combine drained cherries, dried cherries, onion, jalapenos, garlic, and cilantro in a medium saucepan; mix well. Combine reserved cherry juice and cornstarch in a small bowl; mix until smooth. Stir into cherry mixture. Cook, stirring constantly, over a medium high-heat until mixture is thickened. Let cool. Serve with tortilla chips and/or cooked chicken or pork.
